From the first crops of fresh, English asparagus and peas to sweet, succulent Welsh mussels, the new spring menu at Chester Racecourse’s award winning Restaurant 1539 celebrates the finest in regionally sourced, seasonal ingredients.
With a focus on provenance, the new menu, designed by Claridge’s-trained Head Chef Ian Penn, features simple, elegant dishes, allowing ingredients to shine. Starters include warm English asparagus with hollandaise sauce, peppered fresh mackerel charred baby gem, herb croutons, radish, spring onion and a mustard emulsion and a Heritage tomato salad with red radish, pine nuts, watercress, roquette, maple and mustard.
Fresh seafood, meat dishes and char-grilled steaks follow, from simply grilled sea bass with lemon to 28 day dry-aged steaks and a 16oz Chateaubriand for two. Vegetarian options include and English asparagus and pea gnocchi with broad beans, parmesan and mint cream and a vegan-friendly cumin scented tomato risotto with aubergine, courgette, peppers and parmesan crackling. Desserts not to be missed include the apple tart tatin with bay leaf anglaise and stem ginger ice cream and a rich chocolate mousse with candied orange zest, syrup and segments. Dairy and gluten free options are available such as the delicious chocolate berry parfait with cashew cream dessert.
Winner of Taste of Chester and Chester tourism awards, Restaurant 1539 is located on course and open all year round, seven days a week for lunch and dinner. Serving classic and seasonal dishes complemented by an expertly crafted wine list, 1539 offers diners the finest ‘room with a view’ in the region. Named 1539 after the year that racing first took place on the famous Roodee at Chester, this sophisticated and modern, glass-fronted restaurant features incredible panoramic views of the entire racecourse. Above the restaurant, the rooftop at 1539 offers another unique setting with a bar, Miami- style lounge seating and open views across the historic course. Restaurant 1539 is open Monday to Saturday for lunch and dinner and until 6pm on Sundays. The Express Menu offers great value, with two courses for £15.39 available from 12 until 4pm Monday to Saturday.
